Bulgaria is the second largest producer of foie grasin the
world (after France) with about 10% of the global production (approximately
2,600 tons per year). Furthermore, France is the largest consumer of foie gras
globally, importing about 3,750 tons per year, 2/3 of which come from Bulgaria.
Agroplasment-92-VJSC and Bulian SJSC are the leading Bulgarian producers of
foie gras and other duck products. The two companies account for approximately
1/3 of all Bulgarian foie gras exports.
Agroplasment-92-VJSC commercially raises, fattens, and slaughters Mulard ducks
for sale of foie gras and other duck products on the local and EU markets. Located
in Dobrich, Bulgaria, in the heart of the main grain producing region of the
country, Agroplasment-92-VJSC has rich history and established traditions in
the poultry production and meat processing. The company’s cornerstone activity
is the rearing of Mulard ducks for the production of foie gras and meat.
Products include magret and other fillets, duck legs, livers, duck feathers,
pet food, and other products. About 350,000 ducks are raised at the farm
annually, while slaughterhouse capacity is 2,400 birds per day. The birds are
reared in specialised farms in Northeast Bulgaria, while the force-feeding
process takes place in the firm’s base facility near Varna, Bulgaria. Annual
production for 2013 included 170 tons of foie gras, 259 tons of magret fillet, and
over 1,000 tons of other products.
Bulian SJSC is the largest slaughterhouse in Bulgaria and the first company to
export foie grasto France, starting from the 1980s. Established in 1969, the
company went through a significant equipment and process renovation in 2005.
Òhe slaughterhouse, located in Parvomay (45km from Plovdiv, the second biggest
city in Bulgaria), has a capacity of 6,000 ducks / day and is the biggest in
Bulgaria. Over 1 million ducks were processed in 2014, and annual production
exceeded 640 tons of foie gras and 4,250 tons of other products. Total plant
area is 64,000 sq. m. while facilities cover 7,000 sq. m. with two autonomous
processing lines – for ducks and chickens. Refrigeration facilities cover
additional 2,000 sq. m. Bulian SJSC has completed considerable investments
since 2005 in buildings and equipment, in the implementation of food safety
procedures and standards, and in personnel qualification to adapt its
operations to European best practices. The plant has ISO 22000:2005 certificate.
